Buckwheat Pancakes with Vegan Nutella

It’s finally Veganuary! An excellent excuse for me to get back on the blogging scene.

We had an amazing Christmas holiday in Mauritius this year, and one of the highlights for everyone was the hotel pancakes.

It was actual pancake mania – pancakes at breakfast, pancakes at lunch and pancakes at 4pm to tide you over until dinner.

But all those pancakes didn’t do any wonders for the waistline, and so I had to come up with a less sinful solution to fill the void at home. At least that’s what I’m telling myself this is. 🤷🏼‍♀

So anyway, here are some beautiful buckwheat pancakes with homemade Nutella. Enjoy either element of this recipe on its own – but they’re so good together.

Buckwheat Pancakes with Vegan Nutella

Ingredients

Chocolate Hazelnut Spread

  • 150 g blanched hazelnuts
  • 1 tbsp extra virgin coconut oil
  • 75 g dark chocolate (I used Cadbury Bourneville)
  • 1/2 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 2 tbsp maple syrup
  • 30 ml hazelnut milk

Buckwheat Pancakes

  • 125 g buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp maple syrup
  • 230 ml hazelnut milk
  • 1 tbsp apple cider vinegar
  • handful of chopped hazelnuts (to top)
  • chopped fruit (to top)

Instructions

Chocolate Hazelnut Spread

  • Preheat the oven to 175C and place the blanched hazelnuts on a baking tray. Roast for 15 minutes and then whizz in a food processor. The bowl will need scraping down a few times, so scrape, whizz and repeat until the butter is a creamy consistency. 
  • Break up the chocolate into smaller chunks and place in a microwave-safe bowl with the coconut oil. Microwave on 50% power for 2-4 minutes, stirring in 30 second intervals until fully melted. 
  • Add the chocolate mixture to the hazelnut butter, followed by the maple syrup, hazelnut milk, vanilla and salt. Whizz again until the spread is shiny and smooth. 

Buckwheat Pancakes

  • Start by stirring the apple cider vinegar into the milk, allow to rest for a couple of minutes until it curdles. Meanwhile, mix the flour, baking powder and salt in a bowl and give it a whisk. Then pour the milk onto the flour mixture and add some vanilla and maple syrup. Allow the mixture to stand for about 5 minutes (it will get a little thicker). 
  • Heat a non-stick frying pan over a medium heat, then pour on 4 tablespoons of batter. Allow the pancake to get completely covered in bubbles (this should only take a minute) then flip onto the other side and cook for another minute until golden. Plate up while still warm, drizzle over your homemade Nutella and top with nuts of fruit of choice.
